Ingredients

For the Fries

  • 4 medium potatoes, cut into ¼-inch thick lengthwise (Russet, sweet, or Yukon) Any variety of potatoes can be used.
  • 2 tablespoons extra virgin olive oil Used to coat the fries.
  • 2 tablespoons cornstarch Helps make fries crispy.
  • 2 teaspoons garlic powder For flavor.
  • 1 teaspoon smoked paprika Adds a smoky flavor.
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ cup grated Parmesan cheese Sprinkled over fries when hot.
  • 1-2 cups Garlic Parmesan Sauce, for garnish Optional sauce for serving.

Instructions

Prep + Soak Potatoes

  • Wash and peel the potatoes, then cut them into sticks that are about ¼-inch thick.
  • Place the cut potatoes in a large bowl filled with water and soak for at least 30 minutes to remove excess starch.

Cook the Fries

  • After soaking, drain the potatoes and pat them dry with a clean kitchen towel.
  • In a bowl, mix the olive oil, cornstarch, garlic powder, smoked paprika, parsley, basil, oregano, and thyme.
  • Add the dried potatoes to the bowl and toss until all the fries are coated.
  • Preheat your air fryer to 380°F (193°C).
  • Place the fries in the air fryer basket in a single layer, cooking in batches if necessary.
  • Cook for about 15-20 minutes, shaking the basket every 5 minutes for even cooking.
  • Once golden and crispy, sprinkle the grated Parmesan cheese over the fries while hot.

To Make the Garlic Parmesan Sauce

  • Mix ½ cup of mayonnaise with minced garlic, a squeeze of lemon juice, and a pinch of salt to taste.

Serve

  • Serve the fries hot and fresh, drizzling with Garlic Parmesan Sauce.
