  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil or butter
  • 1 large onion, thinly sliced
  • 2 pieces apples, thinly sliced (Honeycrisp or Gala)
  • 1 cup apple cider (not vinegar)
  • ½ cup chicken broth
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
  • Salt & black pepper, to taste

Instructions

Preparation

  • Begin by seasoning the chicken breasts generously with salt and black pepper.
  • In a large skillet, heat the olive oil or butter over medium-high heat.
  • Once hot, carefully place the seasoned chicken breasts in the skillet. Sear the chicken for 3-4 minutes on each side until they turn a golden brown color.
  • Remove the chicken and set it aside on a plate.

Cooking

  • In the same skillet, add the thinly sliced onions and cook for 3-4 minutes until soft and translucent.
  • Stir in the apple slices and cook for 2-3 minutes until slightly tender.
  • Pour in the apple cider and chicken broth, scraping up the browned bits from the bottom of the pan.
  • Add the fresh thyme leaves, return the seared chicken to the skillet, and let everything simmer together for about 8-10 minutes until the chicken is fully cooked and the sauce reduces slightly.

Serving

  • Serve the dish hot over mashed potatoes or rice, drizzling the sauce with apples and onions over the top.

Notes

If using dried thyme, use less than fresh. Consider adding pears with apples for extra sweetness. Chopped nuts like walnuts or pecans can be added for texture. To store leftovers, cool at room temperature and refrigerate in an airtight container for up to 3 days.
