  • Increase heat to high. Add thinly sliced ribeye steak and sear until browned, about 1-2 minutes per side. Chop the steak as it cooks.
  • Reduce heat back to medium. Mix sautéed vegetables into the skillet with the steak. Stir in Worcestershire sauce and seasonings, cooking for another 2-3 minutes.
  • In a separate saucepan, melt butter over medium heat. Whisk in flour to create a roux, cooking for about a minute. Gradually add milk, whisking until thickened. Stir in provolone and mozzarella until melted.
  • In boiling salted water, cook fresh cheese tortellini for 3-5 minutes until tender and floating. Drain and set aside.
  • Toss cooked tortellini with cheesesteak filling from skillet. Mix in cheese sauce until well-coated. Serve hot, garnished with parsley, grated Parmesan, and hot sauce.
