Ingredients

Protein

  • 1 pound chicken breasts or boneless skinless thighs for extra juiciness
  • 1 block tofu press before using for best texture
  • 1 pound shrimp peeled and deveined

Sauce

  • ¼ cup soy sauce or tamari for gluten-free
  • 2 tablespoons honey or maple syrup for vegan
  • 1-2 tablespoons sriracha adjust for desired spice
  • 1 tablespoon arrowroot powder or cornstarch as a substitute

Rice Base

  • 2 cups sticky rice jasmine or basmati are alternatives

Vegetables

  • 2 cups broccoli or bell peppers, snap peas

  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika

Instructions

Cooking Process

  • Rinse your sticky rice and soak it for 30 minutes. Steam it for 20-25 minutes until tender and fluffy; keep warm.
  • Chop the broccoli into florets and steam them for 3-5 minutes until bright and tender, or toss them into the skillet with the chicken once cooked.
  • Slice the chicken breasts into strips, and season with salt, pepper, chili powder, smoked paprika, onion powder, and oregano.
  • Heat olive oil in a skillet over medium-high heat, add the seasoned chicken strips, and cook for 8-10 minutes until golden brown.
  • Once the chicken is cooked, return the steamed broccoli to the skillet, tossing for 3-5 minutes until warmed through.
  • In a separate bowl, whisk together soy sauce, honey, sriracha, and arrowroot powder. Pour this mixture into the skillet and simmer for 3-5 minutes until it thickens.
  • In a small bowl, mix mayonnaise with a touch of sriracha and water until drizzable.
  • Start with a layer of sticky rice, followed by the chicken and broccoli mix on top, drizzle with spicy mayo, and sprinkle sesame seeds before serving warm.
