Ingredients

For the Pasta

  • 400 grams Pasta Any type works well, be it spaghetti, penne, or fettuccine.

For the Salmon and Sauce

  • 600 grams Salmon Fillets Can substitute with firm fish like trout.
  • Olive Oil Perfect for frying; you can use butter for richer taste.
  • 5 cloves Garlic Adjust to taste; roasted garlic offers a milder sweetness.
  • 2 lemons Lemon Juice Fresh juice is preferable, but bottled is a quick alternative.
  • 240 grams Heavy Cream Mix with milk for a lighter option.
  • 1 bunch Fresh Dill If not available, use 1 tablespoon of dried dill instead.
  • Salt & Pepper Adjust according to your taste preferences.

Instructions

Directions

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Place the salmon fillets skin-side down and cook for about 4-5 minutes, then flip and cook for an additional 2-3 minutes until slightly undercooked. Remove from the pan.
  • In the same skillet, add a splash more olive oil and sauté the minced garlic for 1-2 minutes until fragrant but not browned.
  • Carefully flake the cooked salmon, discarding the skin and any bones. Add flaked salmon back to the skillet with lemon juice, dill, salt, and cream. Stir gently.
  • Let the mixture simmer on medium-low heat for about 5 minutes until warmed through and slightly thickened.
  • Toss the cooked pasta into the salmon sauce, mixing gently to coat all the noodles evenly. Top with additional dill if desired.

Notes

Store leftovers in an airtight container for up to 2 days. Can freeze for up to 2 months. Reheat gently on the stove adding a splash of cream or broth.
