Ingredients

For the soup

  • 3-4 lbs ripe organic tomatoes, cut into wedges Choose ripe tomatoes for best flavor.
  • 2 bulbs garlic Roasted until tender.
  • ½ cup onion, chopped
  • 1 tablespoon Extra virgin olive oil
  • 1 ½ cups organic heavy cream Can be substituted with coconut milk for a dairy-free version.
  • 2 cups organic vegetable stock Ensure it's vegan-friendly if necessary.
  • 4 tablespoons tomato paste, organic
  • 1 teaspoon sea salt Plus more to taste.
  • 1 teaspoon On Everything All-Purpose Blend
  • ½ teaspoon smoked paprika

For serving

  • 1 serving Grilled cheese sandwich A great pairing with the soup.

Instructions

To Roast Tomatoes + Garlic

  • Preheat your oven to 400°F (200°C).
  • Place the cut tomatoes and whole garlic bulbs on a baking sheet. Drizzle with olive oil and sprinkle with a little sea salt.
  • Roast in the oven for about 30-35 minutes, or until the tomatoes are soft and slightly caramelized. The garlic should also be tender.

Blend Everything Together

  • Once the tomatoes and garlic are done roasting, allow them to cool for a few minutes.
  • Squeeze the roasted garlic out of its skin and add it along with the tomatoes to a blender.
  • Add the chopped onion, vegetable stock, tomato paste, sea salt, On Everything All-Purpose Blend, and smoked paprika.
  • Blend until everything is smooth and well combined.

To Make the Soup

  • Pour the blended mixture into a large pot over medium heat.
  • Stir in the heavy cream and bring the soup to a gentle simmer. Cook for about 10-15 minutes, allowing the flavors to meld together.
  • Taste the soup and add more salt or spices if needed.

How to Serve

  • Serve this delicious soup hot. Pour it into bowls and enjoy it with a warm grilled cheese sandwich on the side.
  • You can also sprinkle some fresh herbs on top for extra flavor. If you want, add a dollop of sour cream or a drizzle of olive oil for a special touch.

Notes

If you have leftovers, let the soup cool completely, transfer it to an airtight container, and store in the fridge for up to 4-5 days, or freeze for up to three months. To reheat, simply warm it on the stove over low heat or microwave until heated through.
