Ingredients

Filling

  • 1 can Black Beans drained and rinsed
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 1 teaspoon Paprika smoked paprika for extra kick
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste
  • ½ cup Vegetable Broth or water with more spices
  • 2 tablespoons Lime Juice fresh is best
  • ¼ cup Cilantro chopped
  • 2 tablespoons Plant Butter or regular butter

Taquitos

  • 8 medium Flour Tortillas or corn for gluten-free
  • 2 tablespoons Olive Oil for brushing

Instructions

Preparation

  • In a medium saucepan, combine black beans, diced onion, minced garlic, vegetable broth, paprika, cumin, salt, and pepper. Simmer for 15 minutes until onions are soft and liquid reduces.
  • Stir in plant butter, lime juice, and cilantro. Mash everything together until well combined and creamy.
  • Lay flour tortillas flat and portion about 3 tablespoons of the mixture onto each. Roll tightly, sealing the seam side down.
  • Line a baking tray with parchment paper and brush it lightly with olive oil. Place the rolled taquitos seam side down.
  • Brush the tops of the taquitos with more olive oil and bake at 400°F for 20-25 minutes until crispy and golden brown.
  • Remove from the oven, let cool for a minute, and serve warm with salsa, guacamole, or your favorite dipping sauce.

Notes

Optional: Add a sprinkle of fresh cilantro on top before serving for extra flavor.
