Ingredients

For the Chicken

  • 600 g Chicken (boneless breast or thigh) Skin-on for extra flavor recommended.
  • 3 pieces Eggs Acts as a binder for the chicken coating.
  • Salt Adjust to taste.
  • 120 g All-purpose flour Can be swapped with gluten-free flour.
  • 1 cup Neutral oil Such as canola for frying.

For the Cauliflower and Rice

  • 500 g Frozen cauliflower Fresh cauliflower also works.
  • 185 g White rice Can substitute with brown rice.
  • 1.5 cups Water or broth Vegetable or chicken broth recommended.

For the Sauce

  • 117 g Ketchup The base of the sweet and sour sauce.
  • 58 g Rice vinegar or apple cider vinegar Adds zesty acidity.
  • 50 g Brown sugar or honey Can try agave or coconut sugar.
  • 2 tablespoons Soy sauce Consider low-sodium for health.
  • 1 tablespoon Cornstarch For thickening the sauce.
  • 2 tablespoons Cool water To mix with cornstarch.

Instructions

Cooking Instructions

  • Begin by heating 1 cup of neutral oil in a large pan over medium heat until shimmering.
  • Steam or boil 500g of frozen cauliflower until very soft, about 25-30 minutes.
  • Cook 185g of white rice in your preferred method until fluffy.
  • In a bowl, whisk together 3 eggs and a pinch of salt until well combined.
  • Coat each chicken piece in the egg mixture first, followed by an even layer of 120g of all-purpose flour.
  • In batches, fry the coated chicken in the hot oil for about 3-4 minutes on each side, or until golden brown.
  • In a small pot, combine 117g of ketchup, 58g of rice or apple cider vinegar, 50g of brown sugar (or honey), and 2 tablespoons of soy sauce. Simmer over low heat.
  • Mix 1 tablespoon of cornstarch with 2 tablespoons of cool water in a small bowl and gradually stir into the sauce.
  • In a large bowl, toss the fried chicken and soft cauliflower together, pouring the sweet and sour sauce over them and mix gently.
  • Serve the mixture over the fluffy rice, and enjoy a restaurant-quality meal at home!

Notes

Garnish with sesame seeds or sliced green onions for added flavor. Store leftovers separately for best texture when reheating.
