Ingredients

For the Apple Filling

For the Cheddar Herb Biscuit Topping

  • 2 cups organic all-purpose flour
  • ¼ cup organic cane sugar
  • 2 teaspoons baking powder
  • 6 tablespoons VERY COLD vegan butter, cut into pieces Salted works well.
  • 1 teaspoon dried parsley
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • 1 cup shredded dairy-free sharp cheddar cheese
  • 1 cup almond milk, VERY COLD
  • 1 tablespoon freshly-squeezed lemon juice

For the Egg Wash

  • 1 egg egg Mixed with 1 tablespoon of milk.

For Additional Sweetness

  • ¼ cup pure maple syrup Optional drizzle on top when serving.
  • 1 cup full-fat coconut milk/cream (organic)

Instructions

Preparation

  • Preheat the oven to 400 degrees Fahrenheit. Lightly grease a medium 10-inch deep skillet with butter or oil.
  • In a large bowl, combine the sliced apples with ½ cup cane sugar, ¼ cup brown sugar, cornstarch, cinnamon, nutmeg, sea salt, allspice, vanilla extract, and juice from half a lemon. Mix until apples are coated and pour into prepared skillet.

Biscuit Topping

  • In another bowl, whisk together flour, ¼ cup cane sugar, baking powder, dried herbs, and garlic powder.
  • Add cold vegan butter and mix until crumbly. Stir in dairy-free cheddar cheese.
  • Pour in very cold almond milk and lemon juice. Mix until just combined, with some lumps remaining.

Assembly and Baking

  • Spoon biscuit dough over apple filling, spreading it out but not completely covering it. Brush the egg wash over the topping.
  • Bake in preheated oven for 35-40 minutes, until biscuits are golden and apples are bubbly.

Serving

  • Let cool for a few minutes. Serve warm alone or with dairy-free ice cream and a drizzle of maple syrup.

Notes
