How to Make Chocolate-Caramel Cookies

  • Cream softened butter and granulated sugar together in a mixing bowl using an electric mixer until light and fluffy—about 3-5 minutes. Add the egg and vanilla extract, beating until well combined.
  • In a separate bowl, whisk together all-purpose flour, cocoa powder, and baking soda. Gradually fold the dry mixture into the wet ingredients until a soft dough forms. Stir in chocolate chips.
  • Scoop large dough balls (about 2 tablespoons each) onto a parchment-lined baking sheet, leaving space between them. Bake in a preheated oven at 350°F (175°C) for roughly 12 minutes until edges are set—soft in center.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack. Spread chocolate frosting on each cookie.
  • In a microwave-safe bowl, heat caramel candies and heavy whipping cream together until melted and smooth, stirring every 30 seconds. Drizzle over cookies and sprinkle with Skor bits.
  • Let the cookies sit for a few minutes to allow the caramel to set before serving. Enjoy warm for the ultimate treat!
