  • Prepare Chicken: Slice the chicken breast into thin pieces. Marinate in a mixture of baking soda, cornstarch, vinegar, and cold water for about 15 minutes.
  • Sear Chicken: Heat sesame oil in a wok over medium-high heat. Add marinated chicken and sear until golden brown, about 5-7 minutes. Set aside to keep warm.
  • Make Sauce: In the same wok, drizzle in a bit more sesame oil and sauté minced garlic until fragrant, about 30 seconds. Add soy sauce, chicken broth, hoisin sauce, Shaoxing wine, and sugar. Stir to combine.
  • Thicken Sauce: Mix additional cornstarch with cold water to create a slurry. Gradually pour into the sauce, simmering until thickened, about 2-3 minutes.
  • Combine Ingredients: Toss the seared chicken and steamed broccoli back into the wok, stirring to coat fully in the sauce. Serve over rice or noodles, garnished with sesame seeds and sliced green onions.

Notes
