Preparation Steps

  • Start by washing and drying your tomatoes. Blanch and peel for a smoother texture if preferred.
  • Slice the tomatoes into 1 cm thick pieces and finely chop the garlic.
  • In an oven-safe skillet, melt the butter over medium heat and whisk in the sugar until caramelized.
  • Stir in the chopped garlic and dried herbs into the caramel, cooking for about a minute.
  • Neatly arrange the sliced tomatoes in the skillet and cook on low heat for 20-25 minutes.
  • Just before the tomatoes finish cooking, drizzle in balsamic vinegar, stirring gently.
  • Preheat your oven to 180°C (350°F).
  • Roll out the puff pastry on a floured surface, pierce with a fork, and place over the tomatoes.
  • Bake for 25-30 minutes, until the pastry is golden brown and flaky.
