  • 2 tablespoons Extra Virgin Olive Oil High-quality olive oil enhances the richness.
  • 1 teaspoon Sugar Optional; balances the acidity of tomatoes.
  • 1 teaspoon Fleur de Sel Adds texture and flavor; sea salt can substitute.

Cheese Layer

  • 250 grams Mozzarella di Bufala Creamy cheese lends a luxurious richness.
  • 50 grams Fresh Basil Use fresh basil for the best aroma.

For Assembly

Instructions

Preparation

  • Preheat the oven to 150°C (300°F).
  • Rinse the cherry tomatoes, dry them, slice in half, and arrange cut-side up on a baking tray.
  • Drizzle the halved tomatoes with olive oil, sprinkle with sugar and fleur de sel.
  • Bake for 45 minutes to an hour until lightly caramelized and softened, then let them cool.
  • Drain the mozzarella and chop into irregular cubes. Season with olive oil and salt.
  • Layer mozzarella, roasted tomatoes, and basil in small glasses or jars. Drizzle with crème balsamique if using.
  • Chill in the refrigerator for 15-30 minutes before serving.

These verrines can be prepared a day in advance for convenience. Best enjoyed fresh and chilled.
