Ingredients

For the Chai Maple Syrup

  • ¼ cup pure maple syrup Adjust sweetness based on preference.
  • 2 tablespoons organic brown sugar Adjust sweetness as desired.
  • 4 bag premium black tea bags Chai tea bags can be used instead.
  • 2 teaspoons chai spice mix See post for actual ingredients.
  • ¼ cup filtered water For steeping the tea.

For the Mocktail

  • 1 cup unsweetened almond milk Can use favorite plant-based milk.
  • 2 ounces chai maple syrup Prepared earlier.
  • 2 ounces freshly-brewed espresso, cooled Decaf or caffeinated can be used.
  • 2 ounces Kahlua substitute See instructions for preparation.
  • 2 ounces Ritual Zero Proof Rum Alternative Optional.
  • 1 teaspoon molasses For flavor in Kahlua substitute.
  • 1 teaspoon vanilla extract
  • 1-2 sticks cinnamon sticks Optional, for garnish.
  • Cinnamon sugar for rims ½ cup organic cane sugar + 1 teaspoon cinnamon Mix together for rimming glasses.

Instructions

Prepare the Chai Maple Syrup

  • In a small saucepan, bring water to a gentle boil.
  • Add in the black tea bags and chai spice mix. Let steep for about 10 minutes.
  • Remove the tea bags and stir in the maple syrup and brown sugar. Cook for a few more minutes until slightly thickened. Remove from heat and let cool.

Make the Kahlua Substitute

  • In a small bowl, mix together the instant coffee, molasses, and about ¼ cup water until combined and smooth.

Assemble the Mocktails

  • In a cocktail shaker, combine the cooled espresso, chai maple syrup, Kahlua substitute, and vanilla extract.
  • Add the almond milk and shake well until frothy.
  • Rim your serving glasses with cinnamon sugar by wetting the rim and dipping into the mix.
  • Pour the mocktail into the prepared glasses.
  • Top with coconut whipped cream and garnish with a cinnamon stick and star anise.

Notes

Store leftover mocktail in the refrigerator for up to 2 days in a sealed container. Avoid storing the coconut whipped cream on top as it is best fresh. Adjust sweetness of the mocktail based on preference, and make the chai maple syrup ahead of time if desired.
