Ingredients

For the Chicken

  • 4 pieces Boneless, Skinless Chicken Breasts Use fresh chicken for tenderness
  • to taste Salt Essential for seasoning
  • to taste Pepper Essential for seasoning

For the Sauce

  • 1 cup Chicken Broth Opt for low-sodium if preferred
  • 1 cup Heavy Cream Half-and-half works for a lighter version
  • 1 cup Grated Parmesan Cheese Nutritional yeast is a dairy-free substitute
  • 4 cloves Garlic (minced) Fresh or pre-minced
  • 1 teaspoon Dried Oregano Can replace with fresh oregano at three times the amount
  • 1 teaspoon Dried Thyme Substitute with fresh thyme at triple the quantity
  • ½ teaspoon Red Pepper Flakes Optional for heat

For the Extras

  • ½ cup Sun-dried Tomatoes (in oil, drained) Fresh tomatoes can be used
  • 2 tablespoons Butter Olive oil is a dairy-free alternative
  • to taste Fresh Basil or Parsley Optional garnish

Instructions

  • Season the chicken breasts with salt and pepper on both sides.
  • Whisk together chicken broth, heavy cream, grated Parmesan cheese, minced garlic, oregano, thyme, and red pepper flakes in a bowl until well combined.
  • Place the seasoned chicken in the crockpot. Pour the sauce over the chicken.
  • Sprinkle sun-dried tomatoes on top of the chicken.
  • Cook on LOW for 4 hours or HIGH for 2 hours until chicken is tender.
  • Add butter during the last 30 minutes of cooking, stirring in for richness.
  • Garnish with fresh basil or parsley before serving.

Notes

Best served with rice, pasta, or crusty bread to soak up the creamy sauce.
