How to Make Easy Low-Carb Chicken Spinach Mushroom Bake

  • Preheat the oven to 375°F (190°C) and grease a baking dish with a bit of olive oil.
  • Sauté the sliced mushrooms in a skillet over medium heat with olive oil for about 5-7 minutes until they're golden brown.
  • Add minced garlic to the skillet and sauté for 1 minute, then stir in the fresh spinach. Cook until the spinach is wilted, about 3 minutes.
  • Season the chicken breasts with salt, pepper, dried thyme, and oregano. Lay them evenly in the baking dish.
