Ingredients

For the Potato Topping

  • 2 pounds Yukon Gold potatoes or Russet for a creamy topping
  • 4 ounces light cream cheese
  • 1 cup grated sharp cheddar cheese or Monterey Jack
  • 1 large egg to brush the top

For the Filling

  • 2 tablespoons olive oil or vegetable oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 pound lean ground turkey or ground beef, pork, or chicken
  • 2 medium sweet bell peppers chopped
  • 1 cup chopped mild green chilies
  • 1 cup frozen corn kernels or fresh/canned corn
  • 2 teaspoons chili powder
  • 1 teaspoon cumin omit if unavailable
  • 2 tablespoons lime juice or lemon juice
  • ¼ cup cilantro leaves chopped

Instructions

Preparation

  • Peel and quarter the potatoes, then place them in a pot of salted water. Boil for about 15-20 minutes or until tender enough to easily mash.
  • Heat olive oil in a 10-inch skillet over medium heat. Add the onion and garlic, cooking until golden and fragrant—about 5 minutes.
  • Next, stir in the lean ground turkey and cook until no longer pink, breaking it up for even browning.
  • Toss in bell peppers, corn, green chilies, chili powder, cumin, lime juice, and cilantro. Cook for another 5 minutes until the peppers soften.
  • Preheat your oven to 350°F (175°C).
  • Drain the boiled potatoes and transfer them to a bowl. Mash until smooth, mixing in the cream cheese and half the cheddar cheese.
  • Spoon the turkey filling into a baking dish, and spread the creamy mashed potatoes evenly on top. Brush with a beaten egg for a golden finish.
  • Place the dish in the preheated oven and bake for about 45 minutes, or until the top is golden brown and the filling is bubbling.

Notes

Optional: Garnish with fresh cilantro or a squeeze of lime before serving for an extra burst of flavor.
