Instructions

Preparation

  • Mix flour and cold butter in a bowl until you reach a sandy texture. Then, add the egg and salt, gradually integrating cold water until the dough forms. Chill in the fridge for 30 minutes.
  • In a frying pan, cook the lardons over medium heat until crispy and golden. Drain them on paper towels and set aside.
  • In a separate bowl, whisk together the eggs, cream, milk, and Parmesan until well combined. Add salt, pepper, and a pinch of nutmeg.
  • Preheat your oven to 180°C (360°F).
  • Roll out the chilled dough on a lightly floured surface and line your tartlet molds. Sprinkle rocket and crispy lardons into each mold, then pour the egg mixture on top.
  • Place the filled tartlet molds in the preheated oven and bake for 20-25 minutes, until the crust is golden brown and the filling is set.
  • Allow the tartlets to cool slightly before unmolding. Serve warm or at room temperature.
