  • 8 ounces Mushrooms (sliced)
  • 4 cups Fresh Spinach thaw if using frozen
  • 1 cup Shredded Mozzarella Cheese substitute with feta or cheddar if desired
  • 2 tablespoons Olive Oil or avocado oil

For Seasoning

  • 1 teaspoon Garlic Powder or substitute with 1 clove fresh minced garlic
  • 1 teaspoon Onion Powder can be omitted or swapped for chopped onions
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Instructions

Steps

  • Preheat the oven to 375°F (190°C).
  • Pour olive oil into a skillet and heat over medium until shimmering.
  • Season chicken breasts with salt, pepper, garlic powder, and onion powder, then sear for 5 minutes on each side until golden brown but not fully cooked.
  • Add sliced mushrooms to the skillet and cook for an additional 2 minutes until tender.
  • Stir in fresh spinach and cook for about 1 minute until wilted.
  • Transfer the mixture into an 8x8 baking dish, spreading evenly.
  • Sprinkle shredded mozzarella evenly over the top.
  • Bake in the oven for 15 minutes until cheese is bubbly and golden.
  • Let the bake rest for 2-3 minutes before serving.

Notes

Garnish with fresh herbs for extra flavor and color. Leftovers taste even better the next day.
