  • 1 cup Shredded Mild Cheddar Cheese Substitute with mozzarella or pepper jack for extra spice.

For the Garnish

  • 1 cup Chopped Dill Pickles Sweet pickles are an alternative for a sweeter note.
  • 2 tablespoon Sesame Seeds Can omit if not preferred.

Preparation Steps

  • Preheat your oven to 375°F (190°C) and grease an 8x8 inch baking dish with nonstick spray.
  • In a skillet, brown the ground beef over medium heat until no pink remains, about 7-10 minutes. Drain excess grease.
  • Add chopped onions and garlic powder to the skillet; cook until the onions soften, about 3-5 minutes.
  • Transfer the meat mixture to a large bowl and let it cool for 5 minutes.
  • Incorporate the eggs, drained diced tomatoes, cream cheese, and half of the shredded cheddar cheese into the meat mixture; stir well.
  • Spoon the mixture into the greased baking dish, spreading it evenly, then top with the remaining cheddar cheese.
  • Bake for 20-25 minutes until the top is golden brown and the casserole is bubbling.
  • Let the casserole cool for 10 minutes before serving; garnish with chopped pickles and sesame seeds.

Notes
