For the Seasoning

  • 3 tablespoon Olive Oil Can substitute with avocado oil.
  • 1 teaspoon Garlic Powder Fresh garlic can be used for a more robust taste.

Instructions

Preparation

  • Preheat the oven to 400°F (200°C).
  • Wash and chop all vegetables into bite-sized pieces and place them into a large mixing bowl.
  • Cut the Italian sausage into bite-sized pieces and add it to the bowl, mixing it in with the veggies.
  • Drizzle with olive oil and add seasonings: garlic powder, onion powder, paprika, salt, and pepper. Toss until well-coated.
  • Spread the mixture evenly on a single sheet pan for roasting.
  • Bake for 30-35 minutes, stirring halfway through until the sausage is browned and veggies are tender.
