  • 4 pieces boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth

Seasonings and Flavorings

  • ½ cup grated parmesan cheese Use fresh for best flavor.
  • 4 cloves garlic, minced Fresh garlic adds great flavor.
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional) Add for extra heat.
  • 2 tablespoons olive oil For seasoning the chicken.
  • Fresh parsley for garnish (optional)

Instructions

Preparation

  • Begin by washing the baby potatoes and cutting them in half.
  • Rub the chicken breasts with olive oil, then sprinkle on the Italian seasoning, salt, black pepper, and red pepper flakes if desired.
  • Place the halved potatoes in the bottom of the crockpot.
  • Lay the seasoned chicken breasts on top of the potatoes.
  • Pour the chicken broth over the chicken and potatoes.
  • Sprinkle the minced garlic over the chicken and add the grated parmesan cheese on top.

Cooking

  • Cover the crockpot with its lid and set it to cook on low for 6-7 hours or on high for 3-4 hours.
  • After cooking, check that the chicken's internal temperature is 165°F (75°C) and that the potatoes are fork-tender.

Serving

  • Carefully remove the chicken and potatoes from the crockpot and spoon any remaining sauce over the dish.
  • Garnish with chopped fresh parsley before serving.

Notes

You can store leftovers in an airtight container in the fridge for up to 3-4 days. Reheat gently with a splash of chicken broth to keep the chicken moist.
