Ingredients

For the Zucchini Sandwiches

  • 2 medium Courgettes (Zucchini) Use firm, fresh varieties for best texture and flavor.
  • 200 grams Jambon (Ham) Adds savory protein; turkey ham is a lighter substitute.
  • 150 grams Fromage (Cheese) Melting cheeses like Emmental, Comté, or Mozzarella are best.

For the Breading

  • 2 large Œufs (Eggs) Beaten well to help coating adhere evenly.
  • 100 grams Farine (Flour) Acts as binding agent; gluten-free option available.
  • 100 grams Chapelure (Breadcrumbs) Panko breadcrumbs provide extra crunch.

For Cooking

  • 50 ml Huile d'olive (Olive Oil) For frying; avocado oil is a great substitute.
  • to taste Sel et poivre (Salt and Pepper) Season to your liking.

For Garnish

  • 2 tablespoons Persil frais haché (Chopped Fresh Parsley) Optional but adds color and freshness.

Instructions

Preparation Steps

  • Preheat your oven to 180°C (350°F).
  • Wash and slice the zucchini lengthwise into 5mm thick slices.
  • Layer a slice of zucchini with ham and a slice of cheese, then cover with another slice.
  • Prepare three dishes for flour, beaten eggs, and breadcrumbs. Dredge each sandwich in flour, dip in eggs, and coat with breadcrumbs.
  • Heat olive oil in a skillet over medium heat. Fry each sandwich for 3-4 minutes on each side until golden brown.
  • Transfer fried sandwiches to a lined baking sheet and bake for 15 minutes until the cheese is melted.
  • Allow to rest slightly, garnish with parsley, and serve warm.

Notes

Serve alongside a tangy yogurt dip for added flavor. Can be prepared in advance and stored unbaked in the fridge.
