Ingredients

For the Apples

  • 4 pieces Tart Apples (Pink Lady or Honeycrisp)

For the Crumble

  • 1 cup Quick Cooking Oats Use whole oats for a chewier texture.
  • ½ cup Almond Flour Substitute with all-purpose flour if needed.
  • ¼ cup Maple Syrup Coconut sugar or brown sugar can be used.
  • ¼ cup Brown Sugar Can be substituted with coconut sugar.
  • ½ cup Pecans Substitutes: almonds or walnuts.
  • 2 tablespoons Coconut Oil Unsalted butter is a substitute.

Instructions

Steps to Prepare

  • Preheat your oven to 350°F (175°C) and line a small sheet pan with parchment paper.
  • Core each apple carefully, leaving the base intact and brush the tops with melted coconut oil.
  • Mix together almond flour, brown sugar, oats, pecans, and cinnamon in a bowl. Add maple syrup and melted coconut oil, stir until crumbly.
  • Fill each apple generously with the crumble mixture and pack it tightly.
  • Place stuffed apples onto the prepared sheet pan and bake for 35-40 minutes until tender.
  • Serve warm plain or with vanilla ice cream/caramel sauce.

Notes

Store baked apples in an airtight container for up to 2 days. Not suitable for freezing. Reheat in the oven at 350°F for 10 minutes.
