Ingredients

For the roasted apples

  • 1 medium Gala apple, thinly sliced
  • 1 tablespoon extra virgin olive oil
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.125 teaspoon dried thyme

For the sandwich

  • 4 slices bread Use fresh sourdough or whole grain for best results.
  • 2 cups organic sharp or mild cheddar, grated or shredded
  • 4 strips candied bacon, chopped

For the herb butter

  • 4 tablespoons unsalted butter, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 pinch sea salt

Instructions

To Roast the Apples

  • Preheat your oven to 400°F (200°C).
  • In a bowl, toss the thinly sliced Gala apple with the extra virgin olive oil, ground cinnamon, ground nutmeg, and dried thyme until the apple slices are fully coated.
  • Spread the apple slices on a baking sheet in a single layer.
  • Roast the apples in the preheated oven for about 10-15 minutes, or until they are soft and slightly caramelized. Remove from the oven and set aside.

To Make the Herb Butter

  • In a small bowl, mix together the softened butter, garlic powder, dried parsley, dried oregano, dried basil, dried thyme, and a pinch of sea salt.
  • Stir until all the ingredients are well combined and spreadable. Set aside.

Assemble + Cook

  • Heat a frying pan over medium heat.
  • While the pan is heating, spread a layer of herb butter on one side of each slice of bread.
  • Place two slices of bread, buttered side down, on the pan.
  • Layer half of the grated cheddar cheese on each slice.
  • Next, add the roasted apple slices and chopped candied bacon evenly on top of the cheese.
  • Sprinkle the remaining cheddar cheese over the apple and bacon layer.
  • Top everything with the other slices of bread, buttered side up.
  • Cook for about 3-5 minutes or until the bottom is golden brown. Flip the sandwiches carefully and cook the other side for another 3-5 minutes, or until golden and the cheese is melted.
  • Remove from the pan, slice, and serve warm with a drizzle of hot honey.

Notes

Serve warm with a drizzle of hot honey. Pairs well with salad or tomato soup. Leftovers can be stored in an airtight container in the fridge for up to two days.
