Instructions

How to Make Cheesy Ground Beef & Potato Casserole

  • In a skillet, heat olive oil over medium heat. Add ground beef, breaking it apart, and cook until browned, about 5-7 minutes.
  • Toss in the chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion softens and becomes translucent.
  • Stir in the diced potatoes and season with salt, black pepper, paprika, and oregano. Mix well.
  • Pour in the beef broth, cover the skillet, and reduce the heat to low. Allow it to simmer for 20-25 minutes, or until the potatoes are tender.
  • Sprinkle the shredded cheddar cheese over the top. Cover again and cook for an additional 2-3 minutes until the cheese melts.
  • Remove from heat and garnish with freshly chopped parsley for a touch of color.

Notes

Serve with a dollop of sour cream on top for extra creaminess. Allow casserole to cool completely before storing.
