For the Casserole

  • 1 head Cauliflower Cut into pieces
  • 8 oz Cream Cheese Can substitute with Neufchâtel
  • 1 cup Sour Cream Can substitute with Greek yogurt
  • 1 teaspoon Garlic Powder Fresh minced garlic optional
  • 1 teaspoon Salt Use sea salt for flavor
  • 1 teaspoon Pepper Black or white pepper
  • 1 cup Shredded Cheddar Cheese For mixing into the casserole
  • 4 slices Bacon Crispy and smoky, can be omitted for vegetarian option
  • 2 stalks Green Onions Chopped, for garnish

For the Topping

  • ½ cup Shredded Cheddar Cheese For topping
  • 2 slices Chopped Bacon Optional topping

Instructions

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 1-quart casserole dish with nonstick cooking spray.
  • Steam cauliflower pieces for about 20 minutes or until soft, then mash gently in a bowl.
  • Combine cream cheese, sour cream, garlic powder, salt, and pepper in a saucepan and heat on low until melted and smooth.
  • Stir in ½ cup of shredded cheddar cheese into the cheese mixture until evenly incorporated.
  • Transfer the cauliflower mixture into the greased casserole dish and top with remaining cheddar cheese and chopped bacon.
  • Bake for 20 minutes or until heated through and cheese is bubbling and golden brown.
  • Garnish with chopped green onions before serving.

Notes

This casserole can be prepared ahead of time and baked when ready. For a vegetarian option, omit the bacon or substitute with sautéed mushrooms.
