Ingredients

For the Cookies

  • 24 pieces Ritz Crackers Any thin, crunchy cracker can be substituted.
  • 1 cup Creamy Peanut Butter Can swap for crunchy peanut butter.

For the Coating

  • 6 oz Chocolate Almond Bark Can also use melting chocolate or chocolate chips.
  • 1 cup Semisweet Chocolate Chips High-quality chocolate is key.

For the Topping

  • 1 teaspoon Sea Salt Flakes Kosher salt or any flaky sea salt will also work.

Instructions

Steps

  • In a medium heat-proof bowl, melt the chocolate almond bark and semisweet chocolate chips together in the microwave or over a double boiler, stirring until smooth.
  • Line a 15" x 10" rimmed pan with wax paper. Place 24 Ritz crackers on the prepared pan, then add a generous tablespoon of peanut butter on top of each cracker. Press another cracker on top.
  • Carefully dip each assembled cookie sandwich into the melted chocolate, coating each side evenly, then let excess chocolate drip off before transferring back onto the wax paper.
  • While the chocolate is still wet, sprinkle with sea salt flakes to enhance the flavor.
  • Chill the cookie pan in the refrigerator or freezer for about 20 minutes until the chocolate hardens completely.

Notes

Optional: Drizzle some melted white chocolate over the dipped cookies for a festive touch.
