Equipment

  • large bowl
  • mixing bowl
  • Baking Sheets
  • Parchment Paper
  • wire racks

Ingredients

For the Dough

  • 2 cups Blanched Almond Flour Can substitute with almond meal for more texture.
  • 1 cup All-Purpose Flour Replace with a 1-to-1 gluten-free flour blend for a gluten-free version.
  • 1 cup Powdered Sugar Sift before use if lumpy.
  • 1 cup Unsalted Butter Ensure at room temperature.
  • 1 large Egg Yolk Avoid using a whole egg to maintain delicate texture.
  • 1 teaspoon Vanilla Extract Almond extract can be used for a nuttier flavor.
  • ¼ teaspoon Salt Balances sweetness.

For the Filling

  • ½ cup Raspberry Jam Preferably seedless; can substitute with blackberry or apricot.

Instructions

Dough Preparation

  • In a large bowl, combine blanched almond flour, all-purpose flour, and a pinch of salt.
  • In a separate bowl, cream the unsalted butter and powdered sugar until light and fluffy, then mix in the egg yolk and vanilla extract.

Combine Ingredients

  • Gradually mix the dry ingredients into the wet mixture until a soft dough forms. If the dough is too soft, chill it in the refrigerator for 10-15 minutes.

Shape Cookies

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Scoop a tablespoon of dough, flatten it, and place about a half teaspoon of raspberry jam in the center. Wrap the dough around the jam until sealed.

Bake

  • Arrange the cookies on the prepared baking sheets, spaced apart. Bake for 12-15 minutes or until the bottoms are lightly golden.
  • Remember to rotate the sheets halfway through for even baking.

Cool and Dust

  • Allow the cookies to cool completely on wire racks. Once cooled, dust with powdered sugar generously.

Notes

For the ultimate cozy treat, pair cookies with a warm cup of tea.
