Ingredients

  • 1 pound chicken cut into bite-sized pieces

  • 1 cup flour can substitute with gluten-free flour
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs or regular breadcrumbs

For the Sauce

  • ½ cup mayonnaise or Greek yogurt for lighter option
  • ¼ cup sweet chili sauce
  • to taste sriracha

For the Bowl

  • 2 cups rice jasmine rice preferred
  • 1 cup fresh veggies (lettuce, cucumber, carrots) for freshness and color
  • ½ cup turkey ham optional

Instructions

Steps

  • Pat the chicken dry with paper towels and cut it into uniform bite-sized pieces. Season generously with salt and pepper.
  • Set up a dredging station using bowls for flour, beaten eggs, and panko breadcrumbs. Coat chicken in flour, dip in egg, and coat with panko.
  • Heat 1-2 inches of oil in a deep skillet to about 350°F for even frying.
  • Carefully add coated chicken in batches, frying for about 4-5 minutes per side until crispy and golden brown. Drain on a wire rack or paper towel.
  • Whisk together mayonnaise, sweet chili sauce, and Sriracha in a small bowl. Adjust to taste.
  • Begin with warm rice at the bottom of a bowl, add fresh veggies around the edges.
  • Top with fried chicken and drizzle with sauce to serve.
