Ingredients

For the Pasta

  • 8 oz Pasta (penne, rotini, spaghetti) Use any shape you love.

For the Chicken

  • 1 lb Boneless, skinless chicken breasts Can substitute with rotisserie chicken.

For the Broccoli

  • 2 cups Broccoli florets Fresh or frozen.

For the Sauce

  • 2 tablespoon Olive oil For sautéing.
  • 3 cloves Garlic, minced Fresh garlic is best.
  • 1 cup Heavy cream (or half-and-half) Can substitute with low-fat milk.
  • 1 cup Grated Parmesan cheese Essential for creaminess.
  • to taste Salt For seasoning.
  • to taste Pepper For seasoning.
  • ½ teaspoon Red pepper flakes Optional, adjust for spice.

For the Finish

  • 2 tablespoon Fresh parsley Optional, for garnish.

Cooking Instructions

  • Dice the boneless chicken breasts into bite-sized pieces. Steam or blanch the broccoli florets until bright green and tender. Cook the pasta according to the package instructions, drain, and set aside.
  • Heat olive oil in a large skillet over medium heat. Add the diced chicken, cooking until it’s browned and fully cooked through, about 6-8 minutes. Season with salt and pepper, then set aside.
  • In the same skillet, add minced garlic. Sauté until fragrant, about 1-2 minutes.
  • Pour in the heavy cream and bring to a gentle simmer. Gradually stir in the Parmesan cheese, mixing until the sauce thickens, around 3-5 minutes.
  • Toss the cooked pasta and broccoli into the skillet, mixing until coated with sauce. Heat for 2-3 minutes.
  • Plate the Chicken and Broccoli Pasta, and garnish with fresh parsley.

Notes

For an extra layer of flavor, squeeze a bit of lemon juice over the finished dish.
