Instructions

How to Make Black Bean & Salsa Chicken Casserole

  • Preheat the oven to 375°F (190°C).
  • Rinse and drain the S&W Black Beans thoroughly.
  • Combine in a large casserole dish the frozen corn, salsa, black beans, and uncooked rice.
  • Pour in the chicken broth, then stir in the chili powder and oregano.
  • Nestle chicken breast pieces into the casserole mixture.
  • Cover the dish with foil and bake for 1 hour.
  • Remove the foil, then sprinkle the shredded cheddar cheese and green onions on top.
  • Return to the oven and bake for an additional 10 minutes.
  • Serve hot, optionally with a dollop of sour cream.
