Ingredients

Flan Base

  • 300 grams Carrots peeled and sliced
  • 1 medium Potato optional
  • 250 ml Milk
  • 200 ml Cream
  • 4 large Eggs

Seasoning

  • 1 teaspoon Cumin adjust to taste
  • 1 teaspoon Salt
  • ½ teaspoon Pepper optional

Instructions

Preparation

  • Peel and slice the carrots into rounds. Steam or boil until tender, about 20 minutes. Allow to cool slightly.
  • In a medium bowl, whisk together eggs, cream, milk, salt, pepper, and cumin until well combined.
  • Mix cooled, pureed carrots into the egg mixture until smooth. Taste and adjust seasoning.
  • Generously butter ramekins to prevent sticking. Fill with flan mixture, leaving space on top.
  • Place ramekins into a deep baking dish and add hot water around them to create a bain-marie.
  • Preheat oven to 180°C (350°F) and bake flans for 20-30 minutes until centers are set but jiggly.
  • Allow flans to cool before serving. Serve directly in ramekins or demold.

Notes

For a pop of color and flavor, top with fresh herbs before serving.
