Instructions

Making the Cheesecake Bites

  • Preheat the oven to 325°F (160°C). Line a muffin tin with paper liners, allowing for easy removal later.
  • Combine the graham cracker crumbs, brown sugar, and melted butter in a mixing bowl. Press this mixture firmly into the muffin liners to create a crust. Bake for 5 minutes until slightly set, then cool.
  • Beat the cream cheese in a bowl until smooth and creamy. Mix in the granulated sugar, sour cream, vanilla extract, and salt. Add the egg and beat gently until just combined.
  • Spoon two tablespoons of the cheesecake filling into each cooled crust.
  • Toss the diced apples in a bowl with brown sugar, cinnamon, and lemon juice. Spoon the apple mixture generously over the cheesecake filling.
  • Mix oats, all-purpose flour, brown sugar, cinnamon, and salt in another bowl. Cut in the butter until the mixture resembles coarse crumbs, then sprinkle it over the apples.
  • Bake the bites for 20-22 minutes, until the filling is set and the tops are lightly golden. Cool completely in the pan, then refrigerate for at least 2 hours before serving.

Notes

For an extra touch, drizzle with caramel sauce before serving. Ensure cream cheese is fully softened for smooth filling.
