Instructions

How to Make Pizza Casserole with Couscous

  • Bring 1 ½ cups of water to a boil in a saucepan. Once boiling, add in the couscous, stir gently, cover, and let it sit for about 5 minutes until fluffy. Use a fork to fluff it up for the perfect texture.
  • Preheat your oven to 350°F (175°C). Grease a 2-quart baking dish generously with olive oil to prevent sticking.
  • In a large skillet, heat a drizzle of olive oil over medium flame. Add diced onions and cremini mushrooms, cooking for about 5-8 minutes until softened. Mix in the tomato paste, fresh spinach, and cooked chicken, cooking until the spinach has wilted (2-3 minutes).
  • Spread the fluffy couscous evenly across the bottom of your greased baking dish. Layer on the tomato sauce, followed by the sautéed vegetable-chicken mixture, and then top with mozzarella cheese.
  • Cover your assembled casserole with aluminum foil and bake in the preheated oven for approximately 20-25 minutes, or until heated through and the cheese is melting and bubbly.

Notes
