  • 1 pound Ground Beef or turkey/chicken for a leaner option
  • 2 tablespoons Italian Sausage Seasoning or mix of garlic powder, oregano and basil
  • 2 cups Riced Vegetables like broccoli or cauliflower
  • 2 cups Fresh Spinach or kale/swiss chard
  • 1 cup Organic Pizza Sauce or homemade marinara
  • to taste Salt
  • to taste Black Pepper

Optional Toppings

  • 1 cup Cheese mozzarella or parmesan

Instructions

How to Make Pizza Spaghetti Squash Casserole

  • Preheat your oven to 400°F. Slice the spaghetti squash lengthwise, scoop out the seeds, and season it with salt and pepper. Bake for approximately 35 minutes until tender and easily shredded.
  • In a large skillet over medium-high heat, brown the ground beef with Italian sausage seasoning and half the salt for 7-10 minutes.
  • Stir in the riced vegetables and fresh spinach, cooking for about 5 minutes until tender.
  • Scrape the cooked squash strands into a casserole dish. Layer the meat and vegetable mixture followed by the organic pizza sauce. Mix everything together gently.
  • Sprinkle cheese on top if desired, then return the casserole to the oven for an additional 20-25 minutes until heated through and the cheese is melted.

Notes

Add fresh basil as a garnish for an extra burst of flavor. Store in airtight containers for easy reheating.
