  • 5 lbs Bone-in Pork Roast Frenched bone adds elegance

  • ¼ cup Extra-Virgin Olive Oil Can substitute with another oil
  • 1 clove Garlic Minced
  • 1 tablespoon Rosemary Chopped
  • 1 tablespoon Thyme Chopped
  • 1 tablespoon Sage Chopped, optional

For the Fruits and Vegetables

  • 4 Shallots Halved
  • 4 Lady Apples or Small Apples Halved
  • 4 Seckel or Forelle Pears Halved

For the Liquid

  • ½ cup White Wine For deglazing
  • 2 ½ cups Chicken or Veal Stock Homemade or low-sodium
  • ¼ cup Apple Cider Can substitute with apple juice

For the Gravy

  • 1 ½ tablespoon All-Purpose Flour Optional, for thickening
  • 1 tablespoon Unsalted Butter Optional, for richness

Instructions

Preparing the Pork Roast

  • Preheat the oven to 375°F (190°C).
  • In a small bowl, mix olive oil, minced garlic, chopped rosemary, thyme, sage, salt, and pepper.
  • Rub the herb mixture generously all over the pork roast.
  • Place halved shallots, apples, and pears around the pork in a large roasting pan.
  • Pour the white wine, stock, and apple cider over the pork and fruits.
  • Roast in the oven for approximately 1 hour and 15 minutes, basting occasionally until the pork reaches 145°F (63°C).
  • Let the roast rest for 15 minutes before slicing.
  • Optional: Use pan drippings to make gravy by simmering with flour until thickened.
