Preparation Steps

  • Prepare Rice: In a saucepan, combine the long grain white rice, water, and salt. Bring to a boil, cover, and reduce the heat to low. Cook for about 15-20 minutes until the rice is tender and fluffy.
  • Preheat Oven: Set your oven to preheat at 350°F (175°C).
  • Mix Ingredients: In a large mixing bowl, combine the cooked rice, chopped cooked chicken, frozen broccoli florettes, shredded carrots, sour cream, salt, pepper, and 2 cups of shredded cheddar cheese. Stir until everything is well mixed and evenly coated.
  • Assemble Casserole: Transfer the mixture into a 13x9-inch baking dish, spreading it out evenly. Sprinkle the remaining cheese on top.
