Ingredients

Pizza Dough

  • 2 ¾ cups organic all-purpose flour See Notes for GF option!
  • 1 cup WARM fresh water Ensure that it's warm and not hot!
  • 1 tablespoon raw honey
  • 1 packet rapid-rise yeast That's 2 ¼ tsps!
  • 1 tablespoon Extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon dried thyme
  • ½ teaspoon sea salt

Toppings

  • 2 cups baby bell/sweet peppers, sliced thin
  • 1 tablespoon Extra virgin olive oil
  • 1 tablespoon dried parsley
  • 1 teaspoon sea salt Plus black pepper, each
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon dried thyme
  • 2 lbs. organic chicken breast
  • 1-2 Tbsps Homemade Jerk Dry Rub Seasoning
  • 8 oz. fresh mozzarella cheese You can also use shredded mozzarella cheese, if desired-about 2 cups!
  • 1 tablespoon Extra virgin olive oil
  • 2 cups Herb roasted tomatoes
  • 1 cup kale, de-stemmed + chopped
  • 1 cup BBQ sauce, homemade or store-bought

Instructions

Bake the Chicken

  • Preheat your oven to 375°F (190°C).
  • Place the chicken breasts on a baking sheet.
  • Rub the chicken with jerk seasoning. Make sure it's well-coated.
  • Bake the chicken for about 25-30 minutes or until it's cooked through. Once done, let it cool, then shred it into pieces.

Roast the Bell Peppers

  • While the chicken cooks, toss the sliced baby bell peppers with olive oil, sea salt, black pepper, smoked paprika, garlic powder, dried oregano, dried basil, and dried thyme.
  • Spread the peppers on another baking sheet.
  • Roast them in the oven for about 15-20 minutes until they are tender and slightly caramelized.

Pizza Crust

  • In a bowl, mix the warm water, honey, and yeast. Let it sit for about 5 minutes until it is frothy.
  • In a large mixing bowl, combine the flour, oregano, garlic powder, and sea salt.
  • Gradually add the yeast mixture and olive oil to the dry ingredients. Mix until a dough forms.
  • Knead the dough on a floured surface for about 5 minutes until it is smooth.
  • Place the dough in a greased bowl, cover it with a cloth, and let it rise for about 1 hour or until it doubles in size.

Assembly

  • Preheat your oven to 450°F (230°C).
  • Roll out the pizza dough on a floured surface to your desired thickness.
  • Place the rolled dough on a pizza stone or baking sheet.
  • Spread BBQ sauce evenly over the dough.
  • Add the shredded chicken, roasted bell peppers, kale, herb roasted tomatoes, and then sprinkle mozzarella cheese on top.
  • Drizzle with a little olive oil.
  • Bake for about 12-15 minutes until the crust is golden brown and the cheese is bubbly.

Notes

Cool for a couple of minutes before slicing. Add extra toppings like fresh cilantro or lime wedges for added flavor. Store leftovers in an airtight container in the refrigerator for about 3 days.
