  • 4 pieces boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed
  • ½ cup pure maple syrup
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 teaspoon fresh thyme leaves (or ¼ teaspoon dried thyme)
  • 2 tablespoons butter For toasting the pecans
  • ¼ cup chopped pecans (optional) For topping
  • Fresh parsley, chopped, for garnish

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine the cubed sweet potatoes with 2 tablespoons of olive oil, garlic powder, salt, and pepper. Toss until well coated, then spread them in a single layer on one half of a lined baking sheet.
  • In the same bowl, add the chicken breasts along with the remaining olive oil, maple syrup, apple cider vinegar, thyme, and more salt and pepper. Toss to coat the chicken fully.
  • Arrange the maple-glazed chicken on the other half of the baking sheet, ensuring pieces are not touching.

Cooking

  • Roast in the preheated oven for about 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F/75°C) and sweet potatoes are tender.
  • In a small skillet, melt the butter over medium heat. Add the chopped pecans, stirring frequently for 3-4 minutes until toasted.

Serving

  • Serve the chicken and sweet potatoes hot from the oven, sprinkled with toasted pecans and garnished with chopped parsley.

Notes

If you have leftovers, store them in an airtight container in the fridge for up to 3-4 days or freeze for up to 2 months. Reheat in the microwave or oven until warmed through. Consider adding a drizzle of extra maple syrup on top before serving for a sweeter touch.
