Ingredients

For the Dip

  • 8 ounces Feta cheese, organic block
  • ½ cup pesto sauce, homemade or store-bought Use homemade for fresher taste.
  • 1 tablespoon raw honey, organic For sweetness.
  • ½ cup Greek yogurt, plain Can substitute with vegetable stock.
  • 1-2 cups roasted herb tomatoes See roasting instructions below.
  • Chopped walnuts, toasted For topping.
  • Honey, for drizzle Adds sweetness on top.
  • Fresh or dried parsley For garnish.

Instructions

Roast the Tomatoes

  • Preheat your oven to 400°F (200°C).
  • Cut your tomatoes in half and place them on a baking sheet.
  • Drizzle some olive oil and sprinkle salt and pepper over the tomatoes.
  • Roast in the oven for about 20-25 minutes or until soft and slightly caramelized. Set aside to cool.

Make the Feta Dip

  • In a food processor, combine the feta cheese, pesto sauce, raw honey, and Greek yogurt.
  • Blend until the mixture is smooth and creamy, adding a little vegetable stock if you prefer a thinner consistency.

Assembly

  • Transfer the whipped feta mixture to a serving bowl.
  • Top it with the roasted tomatoes and sprinkle chopped walnuts over the top.
  • Drizzle with honey and add parsley for color.

Notes

For additional flavor, consider adding garlic or lemon juice. For a spicy kick, add red pepper flakes. To enhance creaminess, blend in some cream cheese with the Greek yogurt. Store leftovers in an airtight container in the refrigerator for 3-5 days.
