  • 2 cups all-purpose flour can substitute with gluten-free flour
  • 1 cup unsalted butter softened
  • 1 cup Parmesan cheese grated, can substitute with Pecorino or Gruyère
  • 1 large egg can substitute with flaxseed for vegan option

Optional Toppings

  • 2 tablespoons melted butter for brushing
  • 1 teaspoon coarse salt for sprinkling
  • 1 teaspoon dried oregano for added flavor

Instructions

How to Make Sablés au Parmesan

  • Combine the flour and grated Parmesan in a mixing bowl until blended.
  • Add softened butter, mixing until the mixture resembles coarse crumbs.
  • Incorporate the egg into the crumbly mixture, gently knead to form a dough.
  • Flatten the dough into a disc, wrap in plastic wrap, and chill in the refrigerator for 30 minutes.
  • Preheat the oven to 180°C (350°F). Roll out the dough to about 3mm thickness.
  • Cut the rolled-out dough into desired shapes using cookie cutters.
  • Arrange the cut sablés on a baking sheet lined with parchment paper and bake for 10-15 minutes.
  • Brush each baked sablé with melted butter and sprinkle with coarse salt and dried oregano.

Notes

For best flavor and texture, serve warm. These cookies can be stored in an airtight container for up to one week.
