  • 3 large Oeufs For vegan option, replace with flaxseed meal mixture
  • 150 grams Crème Fraîche Can substitute with Greek yogurt or sour cream
  • 1 tablespoon Herbes de Provence Fresh herbs like basil or thyme can be used

Instructions

Preparation

  • Preheat your oven to 200°C (400°F).
  • Roll out the pâte feuilletée and fit it into a tart pan, pricking the base with a fork.
  • Blind bake the crust for about 10 minutes until lightly golden.
  • Sauté sliced courgettes in olive oil until soft and slightly golden, about 5-7 minutes.
  • Mix eggs, crème fraîche, crumbled feta, and herbes de Provence until well combined.
  • Combine sautéed courgettes with egg mixture and pour into the pre-baked tart crust.
  • Bake for about 25-30 minutes or until the filling is set and the top is golden brown.
  • Cool slightly before slicing and serving.
