  • 500 g Flour All-purpose or bread flour
  • 250 ml Warm Milk No hotter than 37°C (95°F)
  • 100 g White Sugar Can be substituted with coconut sugar
  • 90 g Unsalted Butter Use non-dairy butter for vegan option
  • 25 g Fresh Yeast Can substitute with about 8 g of active dry yeast
  • 1 large Egg Use a flax egg for vegan version
  • 1 pinch Salt

For the Filling

  • 90 g Butter Base for filling
  • 90 g Brown Sugar Can reduce for less sweetness
  • 3 tablespoon Cinnamon Powder Adjust to taste
  • 0.5 tablespoon Cardamom Powder Optional

For the Topping

  • Pearl Sugar Coarse sugar is a substitute

Instructions

Preparation

  • Heat your milk gently until warm, combine with yeast, sugar, and salt, whisk until frothy.
  • In a bowl, combine flour and softened butter, then gradually add the yeast mixture until smooth. Let rest covered for 30 minutes.
  • Mix filling ingredients in a bowl until smooth.
  • Roll dough into a square, spread filling evenly.
  • Fold dough, cut into 12 strips, twist each strip, and curl into a knot. Place in a greased muffin tray and let rise for 15 minutes.
  • Preheat oven to 200°C (400°F). Brush knots with egg wash, sprinkle with pearl sugar, and bake for 15 minutes until golden brown.

Notes
