  • 2 cans butter beans, drained and rinsed
  • 2 tablespoons unsalted butter for cooking
  • 4 cloves garlic, minced
  • ½ cup organic sundried tomatoes
  • 1 tablespoon organic tomato paste
  • 2 tablespoons Tuscan Marry Me blend
  • 1 teaspoon sea salt
  • 1 cup organic heavy cream for a richer flavor
  • ½ cup organic vegetable stock can substitute with more cream
  • 3 tablespoons white cooking wine optional
  • ½ unit lemon, freshly squeezed
  • 1 cup chopped organic kale
  • ½ cup freshly grated parmesan cheese plus more for garnish

Instructions

Preparation

  • Melt the butter in a large skillet over medium heat.
  • Add the minced garlic and cook for about 1 minute until fragrant. Be careful not to burn it!
  • Stir in the sundried tomatoes and tomato paste. Cook for another minute.
  • Add the Tuscan Marry Me blend and sea salt. Mix well.
  • Pour in the heavy cream and vegetable stock, and stir to combine. Bring to a gentle simmer.
  • If using white cooking wine, add it now and let simmer for a few minutes to reduce slightly.
  • Add the squeezed lemon juice, butter beans, and chopped kale. Stir gently to coat everything in the sauce.
  • Cook for about 5 more minutes until the kale wilts and the butter beans heat through.
  • Just before serving, sprinkle in the grated parmesan cheese and mix until melted.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Reheat on the stove over low heat, adding a splash of water or stock if too thick. Rinse butter beans well to reduce sodium.
